Raspberry tart


Nothing better than a berries tart to enjoy the summer!


Ingredients :


(1)   sweet pastry

250 g plain flour

75 g icing sugar

25 g ground almond

1 g egg

140 g butter

1 pinch of salt


(2) Crème pâtissière 

500 mL whole milk

1 Tsp vanilla paste

100g sugar

4 yolks

50 g custard powder or cornflour





Preheat the oven to 170 degrees.

Put all the ingredients in the bowl of your mixer. Do not overwork the paste.

Cover with cling film and put in the the freezer for 15 min.

Bake it blind for about 25 min.


(2) Crème pâtissière 

  • Put the milk in a saucepan and bring it to simmer.
  • In a bowl mix the sugar, egg, custard powder and the vanilla paste.
  • Pour the hot milk onto the mixture and stir it.
  • Put it back to the hob stir continuously until it thickens.
  • Let it rest then pour it into the sweet pastry.


Decorate the tart with berries
