My healthy Gluten Free Cookies

The summer is coming now and I am desperate to lose my pounds (… stone to be more accurate 🙂 before the holidays.

The thing is, it’s hard when you are baking every day in your kitchen 🙂

So the option I was thinking of is healthy baking for the next few weeks!

I gave a recipe for Gluten free Cookies already but this recipe is lighter because it does not contain any fat. I substitute the butter by apple compote!

The texture will be very soft compared to « normal cookie », I really like the taste and it is guilt free! No frustration 🙂 

Another interesting sign: my daughter ate a lot of them which is a massive approval teenager have no filter for their poor parents

Ingredients:

  • 150 g self-raising flour
  • 1 egg
  • 80 g apple compote ( make your own or in baby food section:)
  • 100 g chocolate chips
  • 1 tsp vanilla paste
  • 1 pinch of salt
  • 85 g soft brown sugar

1- Preheat a fan oven at 180 degrees

2- In a bowl, mix the apple compote, sugar, vanilla paste and the egg.

3- Add the flour and finish by the chocolate chips.

4- Leave in the freezer for 15 min to make the consistency harder (easy to design the ball on the baking tray:)

5- On a parchment sheet, put little ball of dough and bake it for 15 min.
