Dried fruits, oat and white chocolate biscuits

Inspired from a recipe of my favourite chef Yotam Ottolenghi.

I replaced the whole almonds by crushed chopped hazelnuts and it is absolutely delicious!

Ingredients for 8 big biscuits:

  • 75 g chopped hazelnuts, I found mine at Morrisons
  • 75 g plain flour
  • 37 g wholemeal flour
  • 75 g Jumbo rolled oats
  • 112 g soft unsalted butter
  • 50 g caster sugar
  • zests of a large orange
  • 65 g dried fruits like cranberries, goji, apricots, raisins… soaked in 13 g of orange juice

For the coating

  • 125g white chocolate

Preheat the fan oven at 170 degrees.

1- Spread the crushed hazelnuts in a pan and roast for few minutes.

2- Place the soft butter, sugar, flours, oats and orange zest in the bowl of a mixer with the paddle attachment in place. Beat on a medium speed for 1 minute until combined. Add the dried fruits and the orange juice.

3- Make small balls with your hands and flat it on a parchment paper. (0.5 cm thick) You should form 8 large biscuits.

4- Bake at 170 degrees in a fan oven for 18 min.

5- When it is still warm, left gently your biscuits and place the white chocolate cut into little pieces under. it will naturally melt with the heat of the tray. (On the photo I spread the white chocolate at the top you choose what you want)

6- Cool it down completely in the fridge

7- Keep in a sealed container for few days
