Continuing my baking experiment with Veggies, I give you this yummy chocolate fondant recipe!
And yes because carrots are not only used in carrot cakes!
This recipe can be classified in your healthy recipes, the steamed carrots replace the fat and the dattes paste the white sugar; and there is no Gluten!
- 400g steamed carrots
- 150 g dark or milk chocolate
- 50g dattes
- 3 eggs
- 1 pinch of salt
- 100 g ground almonds
- 100 g Gluten Free plain flour
- 8 g baking powder
- 30 g cocoa powder
1- Steam 400g of carrots, transfer straight away into your food processor, add the chocolate and mix. No need to melt the chocolate before, the heat of the carrots will melt the chocolate.
2- In a small saucepan, heat the dattes with a minimum of water and bring it to a boil, add into the food processor and mix.
3- Add the 3 eggs and mix.
4- Finish by adding the salt, flour, ground almonds, baking powder and cocoa powder.
5- Transfer into a square 20cm side and bake in a fan oven for 20 minutes at 160 degrees.
