Apple Cake

Last week, I told you that I started to order Vegs and fruits box.

I had few apples left and really wanted to make something nice for a Sunday.

I have a to do-list of recipes I found on the magazines, it is an App called Readly I have on my Ipad that let you have access to a very large choice of  magasine.

My favorite ones are about food obviously, decoration and fashion.

I came across this recipe in the last Great British food magazine and decided to give it a go this morning.

The little family committee gave its approval (according to the few leftover) so I think it’s worth to share.

  • 4 eggs
  • 150g granulated sugar
  • 3 apples
  • 1tsp cinnamon
  • 1/2tsp ginger powder
  • 100g grounds almonds
  • 200g self raising flour
  • 1 tsp baking powder
  • 175g unsalted butter

1- Preheat the fan oven at 160 degrees, peel the apples cut them into quarters add few pieces of butter and a little bit of sugar and bake for 15minutes while you are preparing the mixture.

2- Cream butter and sugar until pale and smooth.

In a separate bowl, sift together the flour, cinnamon, ginger and baking powder.

3- Slowly add the eggs, one at a time.

4- Add the flour mixture, and the ground almonds.

5- Directly transfer in the tin, bake for 45-50 minutes at 160 degrees until a skewer inserted in the middle comes out clean.

Bon appétit!
